CHARACTERISTICS OF THE PARCELS SELECTED FOR LA VIOLETA Our thorough knowledge of our finca has enabled us to select the parcels that best express the elegance, concentration and typicity of Malbec, namely parcels 5 and 9, to produce a Violeta. HARVEST Marcelo Pelleriti walks the vineyard, tastes the grapes, and decides when to harvest. Grapes are picked manually into small, 12 kg plastic bins. WINEMAKING METHOD After being manually picked from the clusters, the berries are placed in French oak barrels for cold soaking at 8 °C for 20 days. Then, fermentation follows, with barrel rotation and manual pigeage performed on a daily basis throughout the process. AGEING 24 – 36 months in new French oak barrels, followed by 5 years in bottles.
